Grilled Pompano with Zesty Citrus Marinade

Ingredients:

  • 2 Pompano fish, cleaned and scaled
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  • In a bowl, whisk together lemon zest, lemon juice, olive oil, minced garlic, salt, and pepper.
  • Score the fish on both sides to allow the marinade to penetrate.
  • Coat the Pompano with the marinade and let it sit for 20-30 minutes.
  • Preheat the grill to medium-high heat.
  • Grill the fish for about 4-5 minutes on each side, or until the flesh flakes easily.
  • Garnish with fresh parsley and serve with grilled vegetables.

Baked Pompano Stuffed with Herbs and Feta

Ingredients:

  • 2 Pompano fish, gutted and cleaned
  • 1 cup fresh feta cheese, crumbled
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh dill, chopped
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine crumbled feta, chopped basil, chopped dill, salt, and pepper.
  • Stuff the fish cavities with the herb and feta mixture.
  • Place lemon slices on top of the fish.
  • Place the stuffed Pompano in a baking dish and cover with foil.
  • Bake for 20-25 minutes or until the fish is cooked through.
  • Serve with a side of quinoa salad for a wholesome meal.

Pompano Ceviche with Mango and Avocado

Ingredients:

  • 2 Pompano fish fillets, skin removed and diced
  • 1 ripe mango, diced
  • 1 avocado, diced
  • ½ red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • ¼ cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions:

  • In a bowl, combine diced Pompano, diced mango, diced avocado, chopped red onion, minced jalapeno, and chopped cilantro.
  • Drizzle the lime juice over the mixture and gently toss to combine.
  • Season with salt and pepper.
  • Cover and refrigerate for about 30 minutes to allow flavors to meld.
  • Serve the Pompano ceviche with tortilla chips or as a topping for mixed greens.
